Cotswold Cheese Toasties
Cotswold Cheese Toasties
3 eggs
2½ cups shredded Cotswold Cheese with Chives and Green Onions* (in our Deli)
1 tbsp. Sierra Nevada Stout Multigrain Mustard (or any grainy mustard)
pepper to taste Freshly ground
6 (1/2 -inch thick) slices multigrain bread cut slightly on the diagonal
3 slices Raley's Black Forest Ham cut in half

Prep: 10 minutes Cook: 10 to 12 minutes Makes: 6 servings

1. Preheat oven to 425°F and line a baking sheet with foil. Beat eggs well in a medium bowl; stir in cheese, mustard and pepper.
2. Place bread on prepared baking sheet and spread about a spoonful of cheese mixture and a piece of ham on each. Spoon remaining cheese mixture over top.
3. Bake for 10 to 12 minutes or until hot and bubbly and cheese is lightly browned.
* We love Cotswold, but this is also tasty with Sage Derby or Abbot's Gold.
