Ingredients
1 lb. ground beef
1 (15- oz.) can tomato sauce
1 (1.5- oz.) package burrito seasoning mix
1/4 cup water
1 to 2 tbsp. Art of Chipotle Gourmet Paste
4 to 6 squares cornbread or corn muffins
Shredded Mexican blend cheese, sliced green onions, chopped fresh cilantro (optional)
Directions
Prep time: 5 minutes, Cook time: 15 minutes

Brown beef in a medium skillet until no longer pink; drain
excess fat. Stir in tomato sauce, seasoning mix, water and
chipotle paste; cook over low heat for 5 minutes. Spoon over
cornbread, then sprinkle with cheese, green onions and
cilantro, as desired.

Makes 4 to 6 servings.

This is a GREAT camping recipe. I have confirmed that taco seasoning is OK as well. I have added beans to make it into chili. I also substitute 1 minced chipotle and it's adobo sauce (in Mexican food aisle) for the very expensive chipotle paste. If I am using lean beef cubes instead of ground beef, I will not drain the liquid and use it instead of the added water.
