Irish Egg Filled Puffs
Irish Egg Filled Puffs
Ingredients
1 (17.9- oz.) box Pepperidge Farm Puff Pastry
Shells
2 tbsp. butter
1 leek thinly sliced
9 eggs beaten
3/4 cup small cubes Brie (in our Deli)
6 tbsp. fresh tomato chopped, divided
Directions
Bake pastry shells according to package directions. Remove centers and set aside. Melt butter in a medium skillet. Add leek and cook until very soft. Stir in eggs and cook until halfway done, stirring frequently. Stir in cheese and cook until cheese is melting and eggs are set. Spoon into pastry
shells and sprinkle each with 1 tbsp. chopped fresh tomato.

Makes 6 servings.
