Jeweled Almond Bread

Jeweled Almond Bread
Wrap in clear cellophane or a new kitchen towel and tie with raffia or ribbon. To make it complete, include a bag of freshly ground coffee and a set of holiday mugs and place in a festive basket.
1 cup milk
3/4 cup sugar
2 packages quick rise yeast
1/2 cup butter softened
2 eggs
1/2 tsp. salt
5 to 6 cups flour
1 (7- oz.) package Sun•Maid Dried Fruit Bits
1 cup walnuts shelled
1 (7- oz.) tube almond paste
Prep time: 30 minutes
Rise time: 3 hours
Cook time: 45 to 55 minutes

Heat milk in a small saucepan until warm.

Add sugar and stir to dissolve. Place in a large bowl and
sprinkle yeast over the top. Let stand for 5 minutes or
until foamy. Add butter and eggs and beat well. Stir in salt
and enough flour to make a soft dough. Knead for 10 minutes
or until dough is very smooth and elastic. (A heavy-duty
mixer works well for this.) Knead in fruit and walnuts.
Place in a lightly buttered bowl; cover and let rise for 2
hours. Knead again and divide into 2 pieces. Press each
piece into an 11-by-9-inch rectangle. Crumble half of the
almond paste over half of each rectangle; fold over to
enclose and press lightly. Place on a baking sheet and let
rise in a warm spot for 1 hour. Preheat oven to 325°F. Bake
bread for 45 to 55 minutes or until cooked through and
golden brown. Serve warm or toasted with butter.

Makes 2 loaves.
