Microwave Roasted-Style Provençal Potatoes
Microwave Roasted-Style Provençal Potatoes
1 1/2 lb. small red-skinned potatoes halved or quartered
2 tbsp. kalamata olives (optional) finely chopped
1 1/2 tbsp. olive oil
1/2 tsp. each: oregano, rosemary, thyme,
garlic powder and salt
1/4 tsp. pepper
Prep time: 10 minutes, Cook time: 10 minutes

Toss all ingredients in an 8-inch square microwave-safe dish until potatoes are well coated. Cover with a lid or seal with plastic wrap. Microwave on HIGH for 10 minutes or until potatoes are tender when pierced with a fork.

Makes 6 servings.
