Java Bean Pot

Java Bean Pot
1 (16- oz.) package small white beans
4 cups water, plus extra for soaking
1 cup very strong coffee
1/2 cup Nob Hill Trading Co. Pure Maple Syrup
1 tsp. salt
2 slices bacon
2 cloves garlic minced
Soak time: 1 1/2 hours to overnight
Prep time: 10 minutes
Cook time: about 1 1/2 hours

Quick soak beans according to package directions or soak, covered in plenty of water, for at least 6 hours or overnight. Drain and rinse well. Combine beans and 4 cups water in a large pot and bring to a boil over high heat. Reduce heat and simmer, covered, for 50 minutes. Drain and add remaining ingredients to pot; bring to a boil. Reduce heat and simmer, covered, for an additional 30 to 40 minutes or until beans are tender. Remove bacon and discard.

Makes 10 to 12 servings.
