Light as Air Chicken and Dumplings
Light as Air Chicken and Dumplings
3 (10.75- oz.) cans Raley's 98% Fat Free Cream of Chicken Soup
3 cups Raley's Reduced Sodium Chicken Broth
1 lb. Raley's Boneless, Skinless Chicken Breasts thawed and cubed
2 stalks celery sliced
2 medium Raley's Carrots peeled and sliced
1 cup onion chopped
1/2 cup each: Raley's Frozen Corn and Peas
2 tsp. herbes de Provence
1 cup Bisquick
1/4 cup Sunnyside Farms
Egg Substitute
2 tbsp. fat-free Bayview Farms Milk
Prep time: 20 minutes,
Cook time: about 45 minutes

1. Stir together soup, broth, chicken, vegetables and herbs
in a large pot and bring to a boil. Reduce heat and
simmer, covered, for 30 minutes.
2. Stir together remaining ingredients in a small bowl and
drop tablespoonfuls onto chicken mixture.
3. Cook over low heat, uncovered, for
7 minutes. Carefully flip dumplings over and cook,
covered, for 7 minutes more.

Makes 8 servings.
