Pineapple Tahini Dressing

Pineapple Tahini Dressing
1/2 cup apple cider vinegar
1/2 cup chopped dried pineapple (bulk bin #788)
2 tbsp. tahini
1 tbsp. honey
1½ tsp. minced shallot
Salt and pepper to taste

Toss with baby spinach, dried cranberries and toasted walnuts for a delicious dinner salad.

Prep: 5 minutes, Cook: 5 minutes, Cool: 10 minutes,
Makes: about 1/2 cup

1. Bring vinegar to a boil in a small saucepan. Remove from heat and add pineapple; let stand for 10 minutes, then transfer to a blender.*

2. Add tahini, honey and shallot; blend until smooth. Season to taste with salt and pepper.

*Use caution when blending hot liquids. Hold blender lid down with a kitchen towel while blender is running.
