Silken Chocolate Pudding with Streusel Topping
Ingredients
1/2 cup Wholesome Sweeteners Organic Light Brown Sugar
2 tbsp. soymilk or organic milk
1 12.3- oz.) package silken firm or extra firm tofu
2 tbsp. Green & Black's Organic Cocoa Powder
1 tsp. Simply Organic Vanilla Extract
Streusel Topping:
1/4 cup chopped pecans (Natural Foods Dept. bulk bin #753)
1/4 cup rolled oats (bulk bin #767)
1 1/2 tbsp. Wholesome Sweeteners Organic Light Brown Sugar

Directions

To prepare pudding, stir together sugar and soymilk in a medium saucepan. Bring to a boil over medium-high heat, stirring constantly. Remove from heat and let cool for 10 minutes. Puree tofu, cocoa powder, vanilla and cooled sugar mixture in a blender until smooth. Transfer to a bowl and refrigerate for at least one hour. To prepare streusel topping, mix together pecans, oats and brown sugar in a shallow, microwave-safe dish with your fingers. Spray liberally with nonstick cooking spray; stir again. Microwave on HIGH for 1 minute, then stir and repeat two times. Let cool before sprinkling over pudding.

Makes 4 servings.
