Savory Orange Chicken
Savory Orange Chicken
1 cup chicken stock or reduced-sodium broth
2 tbsp. butter
2 chicken breasts boneless, skinless
1 tbsp. flour
1/4 cup each: Grand Marnier (or other orange liqueur) and orange juice
1/4 cup sliced almonds toasted
Prep time: 5 minutes, Cook time: 20 minutes

Place stock in a small saucepan. Cook over high heat and boil until stock has reduced to 1/3 cup. Meanwhile, melt butter in a medium skillet. Add chicken and cook for about 5 minutes on each side or until cooked through. Remove from skillet and keep warm. Reduce heat to low and stir in flour; cook for 1 minute. Add liqueur and orange juice; cook and stir for 3 to 4 minutes or until sauce is golden brown and thickened. Place chicken on plates and drizzle with sauce. Top with almonds.

Makes 2 servings. Recipe may be doubled or tripled.

Tip: To toast almonds, place on a small plate and microwave on HIGH for 3 minutes until lightly browned.
