Award-Winning Apple Turnovers
2½ Granny Smith apples
1/3 cup sugar
1/3 cup orange juice
1/4 cup brown sugar
1/2 vanilla bean
1 cinnamon stick
1½ tbsp. water
4 tsp. cornstarch
Cream Cheese Pastry Dough:
8 oz. cream cheese cubed
8 oz. butter (2 sticks)
1½ cups flour
1/2 tsp. salt
1 egg well beaten

Prep: 30 minutes Cook: 20 to 25 minutes Refrigerate: at least 2 hours Makes: about 16 tarts

1. Peel apples and cut into 1/2-inch cubes. Place apples, sugar, orange juice, brown sugar, vanilla bean and cinnamon stick in a large heavy bottom pot.
2. Bring to a boil, stirring occasionally. Simmer, covered, for 5 to 8 minutes until apples are fork tender but still slightly crunchy.
3. Stir together water and cornstarch and add to apple mixture, stirring constantly. Cook for 1 minute more, then remove from heat. Transfer to another container to cool, then refrigerate until ready to use.
4. To prepare pastry, combine all dough ingredients except the egg in a mixer with a paddle attachment, mixing until dough comes together and forms a ball. Beat for another 30 seconds to remove any butter lumps. Wrap and refrigerate for at least 2 hours.
5. To prepare turnovers,preheat oven to 375°F. Roll dough out 1/8-inch thick on a lightly floured board and cut into 5-inch circles, re-rolling scraps as necessary.
6. Spoon about 1 heaping tbsp. of filling in the center of each circle. Brush the edges of the dough with beaten egg and bring the edges up to enclose filling. Press edges together tightly to seal in filling, leaving a small space open at the top.
7. Place on prepared baking sheet and bake for 20 to 25 minutes, or until dough is light golden brown.

I made the dough in my food processor and it went together so easily! My family LOVED this recipe. It was very easy to make, but it looked and tasted like it came from an elegant bakery.

HELP! Is the beaten egg one of the pastry dough ingredients in Step#4 OR is it only used to brush the edges of the dough in Step#6? The recipe only calls for 1 egg so I am not clear where it is used.
