Green Chile and Chicken Soup
3 cups chicken stock or reduced sodium broth
2 cups rotisserie chicken chunks
1 (15- oz.) can S&W Pinquito Beans
1 (14- oz.) can green enchilada sauce
1 (7- oz.) container Raley's Fresh Produce Pico De Gallo
1 cup corn
1 cup Fresh Gourmet Santa Fe Style Tortilla Strips

Prep: 10 minutes, Cook: 20 minutes, Serves: 4 to 6

Bring all ingredients except tortilla strips to a boil in a medium saucepan. Reduce heat and simmer, covered, for 20 minutes. Ladle into bowls and top with tortilla strips.

I've made this soup several times and it is delicious. I add a little bit of shredded Mexican cheese blend and fat free sour cream before serving. I also only use one can of chicken broth, as I like it more chunky than soupy. Perfect for a quick and easy weeknight dinner.
