The Princess and the Two Peas
The Princess and the Two Peas
2 cups fresh peas (or frozen, thawed)
1 (15- oz.) can black eyed peas rinsed and drained
1 (8- oz.) can sliced water chestnuts drained and chopped
1/2 cup celery sliced
2 tbsp. olive oil
2 tbsp. fresh basil snipped
1 1/2 tbsp. apple cider vinegar
1/2 tsp. salt
1/4 tsp. sugar
Prep time: 15 minutes, Chill time: at least 2 hours

Stir together all ingredients in a medium bowl; cover and refrigerate for at least 2 hours, stirring occasionally.

Makes 6 to 8 servings.
