Mr. McGregor's Carrots (Sweet and Sour Carrot Ribbons)

Mr. McGregor's Carrots (Sweet and Sour Carrot Ribbons)
4 large carrots peeled
1/2 tbsp. kosher salt
2 tbsp. rice vinegar (not seasoned)
2 tbsp. honey
2 tbsp. low sodium soy sauce
1/2 tsp. ground ginger
1/8 tsp. red pepper flakes crushed
Prep time: 20 minutes, Marinate time: 1 hour

Using a vegetable peeler, cut carrots into long "ribbons" and place in a large bowl. Sprinkle with salt and cover with ice water; refrigerate for 1 hour. Drain well, then stir in remaining ingredients before serving.

Makes 12 servings.
