Bush's Bean and Bacon Soup

Bush's Bean and Bacon Soup
4 strips bacon
1 cup onion chopped
1 cup celery chopped
1 cup carrots chopped
1 (28- oz.) can Bush's Original Baked Beans
1 (14- oz.) can reduced-sodium chicken stock
2 tsp. balsamic vinegar
Cook bacon in a large saucepan until very crisp; remove and drain on paper towels. Pour off all but 1 tbsp. bacon grease from pan and stir in onion, celery and carrots. Cook and stir over medium heat for 10 minutes. Stir in beans, stock and vinegar. Cover and cook over low heat for 30 minutes. Puree slightly so that soup is thickened, but some small chunks of beans and vegetables remain, then crumble bacon into soup.

Makes 6 servings.
