Smoked Turkey and Black-Eyed Peas

Smoked Turkey and Black-Eyed Peas
1 tbsp. olive oil
1 medium onion peeled and chopped
1 cup celery sliced
1 cup carrot sliced
2 cups smoked turkey diced
1-3/4 cups Kitchen Basics Chicken Stock
1 (14.5- oz.) can diced tomatoes
1/2 lb. dry black-eyed peas
2 to 2-1/2 cups water
1 cup green bell pepper
3/4 tsp. hickory smoked salt
3/4 tsp. McCormick Cajun Seasoning
Prep time: 15 minutes
Cook time: 65 to 70 minutes

Heat olive oil in a large pot. Add onion, celery and carrot; cook over medium-high heat for 5 minutes or until lightly browned. Add turkey, stock, tomatoes, black-eyed peas and water. Bring mixture to a boil; reduce heat and simmer, covered, for 45 minutes. Add bell pepper, hickory smoked salt and Cajun seasoning; cook for 15 to 20 minutes more or until beans are tender. Season to taste with salt.
