Chunky Chuckwagon Chili

Chunky Chuckwagon Chili
1 (24- oz.) package Harris Ranch Pot Roast Fully Cooked
2 medium onions peeled and chopped
4 cloves garlic minced
2 (8- oz.) cans tomato sauce
1 (16- oz.) can Bush's Dark Red Kidney Beans drained
1 (15- oz.) can Ranch Style Texas Beans
1 (14.5- oz.) can tomatoes with jalapeños or green chiles diced
1 (12- oz.) bottle beer
1 (7- oz.) can green chiles diced
1 (6- oz.) can tomato paste
1 tbsp. chili powder
1/2 tbsp. each: cumin and oregano ground
Prep time: 10 minutes
Cook time: 1 hour, 30 minutes

Drain juices from pot roast into a large pot; dice meat and add to pot with remaining ingredients. Bring to a boil; reduce heat and simmer, covered, for 1 hour. Remove cover and simmer for 30 minutes longer or until thickened. Serve with cornbread or Santitas Tortilla Chips.

Makes 8 servings.
