Beer Batter Onion Rings
Beer Batter Onion Rings
Oil for frying
1¼ lb. sweet yellow onions (such as Maui or Vidalia)
2½ cups Bisquick baking mix
1½ tbsp. cornmeal
1/4 tsp. salt plus extra for topping
1 (12- oz.) bottle good-quality beer

Prep: 10 minutes Cook: 20 minutes Makes: 50 onion rings

1. Pour oil into a large, deep pot and heat until very hot. (A few small drops of water in the oil will pop when it's hot.) Trim ends from onions. Peel and cut into 3/4-inch-thick slices.
2. Separate into rings, discarding the inner section. In a medium bowl, stir together baking mix, cornmeal, salt and beer with a fork. Dip onion rings into batter and turn to coat well.
3. Drop into hot oil and cook for 2 minutes or until golden brown. Turn and fry for 2 minutes more.
4. Remove from oil and drain well on paper towels. Sprinkle with salt, if desired. Serve warm.
(May be cooked an hour or so ahead, then reheated in a 425°F oven until hot, about 5 to 10 minutes.)
Tip: Break out the paper napkins! These are very light, crispy and crumbly.
