Sweet Spicy Shrimp

Sweet Spicy Shrimp
Ingredients
1 lb. large shrimp with tails, peeled and deveined
1/3 cup honey
2 tbsp. hot chili oil
2 tbsp. light soy sauce
2 cups coconut flaked
Directions
Prep time: 10 minutes
Cook time: 6 to 8 minutes

Preheat oven to 400°F and spray a large,
shallow baking sheet with nonstick cooking spray. Rinse shrimp and pat dry.

In a medium bowl, stir together honey, chili
oil and soy sauce. Place shrimp in bowl and
let stand for 5 minutes. Remove and shake off excess marinade. Dip in coconut, pressing so that it sticks to the shrimp; place on baking sheet. Bake for 6 to 8 minutes or until shrimp is firm and coconut is golden brown.

Makes 4 servings.
