Strawberry, Mango & Jicama Salad

Strawberry, Mango & Jicama Salad
1 (1- lb.) container strawberries, hulled and halved
1 Large firm but ripe mango, peeled, pitted and cubed
1/2 cup 1/4-inch dice jicama
1/4 cup 1/8-inch dice red bell pepper
3 tbsp. lime juice (preferably fresh)
3 tbsp. lightly packed brown sugar
1 tbsp. chopped fresh cilantro (optional)

Prep: 15 minutes, Serves 6 to 8

Lightly stir together all ingredients in a medium bowl. Salad may be served immediately or covered and refrigerated for several hours.

Wine Suggestion
Folie à Deux Rosé - For summer sipping, nothing beats the fresh crispness of a rosé. This one from Napa has a hint of sweetness, making it perfect with our fruit salad.

Excellent salad! Served on 8/8/09 with the Nanneys. Very colorful, flavorful and easy to make ahead. Used the already chopped jicama sticks which saved a lot on prep time and made an excellent and easy jicama salad with the leftover sticks.
