Quick Black Bean Soup
1 cup onion chopped
1 cup carrot chopped
1 cup celery chopped
1 tbsp. oil
3 cups leftover black beans (see Baja Black Beans recipe)
2 cups chicken stock or reduced-sodium broth
1/2 cup salsa
Cook onion, carrot and celery in oil until softened. Stir in
beans and broth. Simmer for 30 minutes, then stir in salsa.
Top each serving with a swirl of sour cream or crema
and a cilantro sprig.

Makes 6 servings.
