1 (16- oz.) package dry black beans
8 cups water
3/4 tsp. salt or to taste
1/2 cup cotija cheese crumbled
Prep time: 10 minutes,
Soak time: 1 hour to overnight,
Cook time: 1 1/2 to 2 hours

Cover beans with water and let stand overnight. (Or quick soak by bringing water to a boil, then remove from heat and let stand for 1 hour.) Bring to a boil; reduce heat and simmer with lid ajar for 1½ to 2 hours or until beans are tender. Season with salt and mash lightly. (Beans will thicken as they cool.) Top with crumbled cheese. Makes 12 servings.
