Spinach, Bacon and Leek Pizza
Ingredients
1 large or 2 small leeks thinly sliced (white and pale green parts only)
1/2 tbsp. olive oil
1 1/2 cups fresh spinach lightly packed, coarsely chopped
1 cup ricotta cheese
1 cup shredded or crumbled Singleton's Sage Derby Cheese (in our Deli)
1/3 cup cooked bacon crumbled
5 cloves Christopher Ranch Roasted Garlic (in our Produce Dept.) sliced
3 (7 -inch) premade pizza crusts
3 tbsp. shredded Parmesan cheese
Directions
Prep time: 20 minutes,
Cook time: about 15 minutes

Sauté leeks in olive oil for 5 minutes to soften. Add spinach and cook for 30 seconds more to wilt. Stir in ricotta, sage cheese, bacon and garlic. Spread onto pizza crusts and sprinkle Parmesan cheese over top. Grill over indirect heat for 10 minutes or until cheese is melted, rotating occasionally with tongs to avoid burning crusts.

Makes 3 generous or 6 small servings.
