Picante Ranch Chicken Salad
Picante Ranch Chicken Salad
1 tbsp. organic butter melted
4 organic boneless, skinless chicken breasts (about 1½ lbs.) pounded to flatten slightly
1 1/4 cups Corazonas Salsa Picante crushed
100% Natural Whole Oats and Fiber Chips
4 cups desired greens
Prep time: 15 minutes,
Cook time: 30 minutes

Preheat oven to 400°F and spray a baking sheet with nonstick cooking spray. Stir together dressing and butter in a small shallow dish and place crushed chips in another shallow dish. Coat chicken breasts with dressing mixture, then roll in crushed chips, pressing them into the surface of the chicken. Place on baking sheet and sprinkle with any remaining crushed chips. Bake for 30 minutes or until chicken is cooked through. Serve on a bed of greens with additional dressing, if you like.

Makes 4 servings.
