Ingredients
2 lbs. yellow flesh or red potatoes
1 cup Imagine Vegetable Broth (in our Natural Foods Dept.)
1 cup Organic Valley Shredded Sharp Cheddar Cheese
1/2 cup Horizon Organic Light Sour Cream
1 tsp. Simply Organic Garlic Salt (in our Natural Foods Dept.)
1/2 cup crushed Boulder Canyon Chips (in our Natural Foods Dept.)
Directions
Prep time: 15 minutes,
Cook time: 35 minutes

Cut potatoes into 1-inch cubes and place in a medium saucepan with broth. Bring to a boil; reduce heat and simmer, covered, for 20 minutes or until potatoes are tender. Mash well and stir in cheese, sour cream and garlic salt. Transfer to a 9-inch baking dish and top with chips. Bake at 400°F for 15 minutes or until lightly browned on top.
