Cucumber Mushroom Cumin Salad

Cucumber Mushroom Cumin Salad
2 cups hot house cucumber quartered and sliced
2 cups mushrooms (remove stems if large) quartered and sliced
1/2 cup red onion quartered and sliced
1 1/2 tbsp. lime juice
1 tbsp. fresh cilantro minced
1/2 tbsp. jalapeño minced
1 tsp. vegetable oil
1/4 tsp. ground cumin
1/4 tsp. salt
Prep time: 15 minutes,
Stand time: 30 minutes

Combine cucumber, mushrooms and onion in a medium bowl. Whisk together remaining ingredients and drizzle over salad; toss lightly to coat with dressing. Let stand 30 minutes before serving.

Makes 6 to 8 servings.
