Apple Oat Pancakes

Apple Oat Pancakes
1 cup organic rolled oats (Natural Foods Dept. bulk bin #767)
1 cup skim milk
3 tbsp. Earth Balance Buttery Spread melted
1 ea egg lightly beaten
2/3 cup flour
1/3 cup soy flour
2 to 3 tbsp. sugar
1 tbsp. baking powder
1 tsp. cinnamon
1/2 cup apple peeled, chopped
1/4 cup walnuts chopped, toasted
Prep time: 10 minutes Cook time: 15

Combine oats, milk, melted spread and egg in a medium bowl. Stir together dry ingredients and add to oat mixture. Stir in remaining ingredients and let stand for 5 minutes. Spray a large skillet with nonstick cooking spray. Pour 1/4 cup batter into hot skillet. Cook for 3 to 5 minutes on each side. Serve with sugar-free maple syrup.

Makes 10 pancakes.

These delicious pancakes are a great source of protein and fiber. Serve Zem with a light syrup or unsweetened applesauce for an easy breakfast.
