Ingredients
1 (6.4- oz.) box Mexican Style Rice-A-Roni
1 lb. boneless, skinless chicken thighs cut in to chunks
1 (15- oz.) can black beans rinsed and drained
1 cup salsa
1 (4- oz.) can MP Brand Diced Green Chiles
3/4 cup pepper Jack cheese shredded
Directions
Prep Time: 10 minutes, Cook Time: 25 minutes

Prepare rice according to package directions. While rice is cooking, cook chicken in a large nonstick skillet until lightly browned and cooked through. Stir in beans, salsa and chiles; cook for a few minutes more until very hot. Stir cooked rice into chicken mixture and top with cheese; cook until cheese is melted.

Makes 6 servings.
