Tropical Mango Sorbet
Tropical Mango Sorbet
3 cups fresh mangoes peeled, pitted and cubed
2 tbsp. sugar
2 tbsp. lime juice
1 tsp. coconut extract
1 cup chilled pineapple juice
Lime peel twists or small lime wedges (optional garnish)
Prep time: 15 minutes
Chill time: several hours or overnight
Freeze time: 20 to 30 minutes

Puree mango, sugar, lime juice and extract in a blender or
food processor until smooth. Transfer to the bowl of an ice
cream maker and stir in pineapple juice; freeze according to
manufacturer's directions. Remove paddle; cover and freeze
until ready to serve. Garnish with twists of lime peel or
small lime wedges.

Makes 8 to 10 servings.
