Ingredients
2 heaping cups fresh cherries pitted
1/4 cup Bonne Maman Cherry Preserves
2 tsp. cornstarch
1 tsp. lemon juice
1/2 tsp. coconut extract
1 ea Pepperidge Farm Chocolate Chunk White Chocolate Macadamia Tahoe Cookies
1 tbsp. shredded coconut
Directions

Prep: 15 minutes Cook: 20 minutes Makes: 2 servings

1. Preheat oven to 375°F. Stir together cherries, preserves, cornstarch, lemon juice and coconut extract in a medium bowl.
2. Spoon into 2 (1½ cup) oven-safe ramekins and bake for 10 minutes. Crumble 1 cookie and 1 tbsp. coconut over the top of each and bake for 10 minutes more.

Sounds good, but I think walnut or oatmeal walnut cookies would be better than white chocolate macadamia in this recipe.
