Mediterranean Chicken and Hummus Pitas
2 pita bread rounds
1¼ cups prepared hummus (in our Deli)
2 cups shredded romaine lettuce
2 cups coarsely shredded rotisserie chicken, chilled
1/2 cup 1/4-inch dice red bell pepper
1/2 cup 1/4-inch dice red onion
1/4 cup light olive oil vinaigrette

Prep: 15 minutes, Cook: 5 minutes, Serves: 4

1. Carefully cut around the edges of each pita circle to form 2 circles. Coat with nonstick cooking spray and grill or broil for 1 to 2 minutes on each side or until crisp and golden brown. Remove from grill and place 1 pita circle on each plate.

2. Spread with equal amounts of hummus. Toss remaining ingredients in a medium bowl and place over hummus.

Wine Suggestion
Cline Viognier - Lush and fragrant, this unique Sonoma white is big enough to hold its own against the hummus, but won’t overwhelm the citrus vinaigrette either.

We love these, especially in the summertime. Nice and light. They also make great "pita pocket" type leftovers for lunch. Cut a pita in half, open it up and stuff it with some of the mixture.
