Lemongrass Chicken Wraps
Lemongrass Chicken Wraps
Ingredients
2 stalks lemongrass
2 tbsp. vegetable oil
2 tbsp. lime juice
2 tsp. sugar
1/2 tsp. fresh ginger, grated
1 clove garlic, minced
Freshly ground salt and pepper to taste
2 cups grilled chicken, diced
1/2 cup matchstick size pieces bell pepper
1/2 cup matchstick size pieces carrots
1/2 cup sliced green onions
24 small romaine or butter lettuce leaves
Fresh cilantro leaves (optional)
Directions
Prep: 30 minutes, Cook: 10 minutes
Chill: at least 1 hour, Serves: 12

1. To prepare dressing, cut lemongrass stalks in half and cut out tiny tender shoots in the center of each. Finely chop and add to a small bowl with remaining dressing ingredients; set aside.
2. To prepare salad, stir together chicken, bell pepper, carrot and green onions; drizzle with dressing and toss well to coat.
3. Spoon equal amounts of mixture into lettuce leaves and top with cilantro, if you like.
Wine Suggestion
dry (not sweet) Riesling like Pacific Rim or a Sauvignon Blanc
