Lemongrass Chicken Wraps

Lemongrass Chicken Wraps
2 stalks lemongrass
2 tbsp. vegetable oil
2 tbsp. lime juice
2 tsp. sugar
1/2 tsp. grated fresh ginger
1 clove garlic, minced
Freshly ground salt to taste
Freshly ground black pepper to taste
2 cups diced grilled chicken
1/2 cup matchstick size pieces bell pepper
1/2 cup matchstick size pieces carrots
1/2 cup sliced green onions
24 small romaine or butter lettuce leaves
Fresh cilantro leaves (optional)

Prep: 30 minutes, Cook: 10 minutes Chill: at least 1 hour, Serves: 12

1. To prepare dressing, cut lemongrass stalks in half and cut out tiny tender shoots in the center of each. Finely chop and add to a small bowl with remaining dressing ingredients; set aside.

2. To prepare salad, stir together chicken, bell pepper, carrot and green onions; drizzle with dressing and toss well to coat. 3. Spoon equal amounts of mixture into lettuce leaves and top with cilantro, if you like.

Wine Suggestion
dry (not sweet) Riesling or a Sauvignon Blanc
