Orzo Stuffed Bell Peppers

Orzo Stuffed Bell Peppers
1 cup dry orzo pasta, cooked according to package directions
1 cup chopped arugula
1 (8.75- oz.) jar Kozlowski Farms Basil & Garlic Bruschetta Tapenade
1 tbsp. capers (optional)
2 cloves garlic, minced
Salt and freshly ground pepper to taste
2 bell peppers (any color), cut in half lengthwise and seeds removed
2 tbsp. finely grated mizithra cheese (optional, in our Deli)

Prep: 10 minutes, Cook: 20 to 25 minutes, Serves: 2 large or 4 small

1. Stir together cooked pasta, arugula, tapenade, capers and garlic in a medium bowl; season to taste with salt and pepper. Spoon into peppers and sprinkle with cheese.

2. Grill on foil over medium heat, covered, for about 10 to 15 minutes or until peppers are soft and filling is warmed through. (Or bake at 350°F for about 15 to 20 minutes.)
