Northern Italian Chicken and Rice Salad
2 Large boneless skinless chicken breasts (about 1 1/4 lb.) seasoned and cooked as desired
2 (5- oz.) packages Mahatma Yellow Rice cooked according to package directions (omit margarine, if desired) and cooled
1/2 cup Amorosa tomatoes (about 1/4 lb or 3 small) chopped
1/3 cup Ken's Steak House Lite Northern Italian with Basil & Romano Dressing
1/2 green bell pepper seeded and diced
4 ea green onions sliced
Dice cooked chicken breasts and place in a large bowl.
Gently combine with remaining ingredients. Serve over
Raley's or Fresh Express Salad Greens tossed with additional
dressing, if you like. Makes 4 servings.
