Icebox Grasshopper Pie

Icebox Grasshopper Pie
1/2 of a 1 lb. 1 oz. package Double Stuf Oreo Cool Mint Creme cookies (about 16 cookies) broken
3 tbsp. butter melted
1 cup heavy whipping cream
2 (8- oz.) packages cream cheese at room temperature
3/4 cup powdered sugar
2 tbsp. green crème de menthe liqueur
Mint leaves (optional garnish)
Serve this old-fashioned classic chilled or frozen.
Prep time: 25 minutes, Chill or freeze time: at least 4 hours

Combine cookies and butter in a food processor and process until fine crumbs form. Press firmly into the bottom and sides of a 9-inch pie plate. Beat cream in a medium chilled bowl with an electric mixer until stiff peaks form. Beat cream cheese and sugar in a large bowl until smooth (no need to clean the beaters); gradually beat in liqueur. Gently fold in whipped cream and spread mixture on top of crust. Refrigerate or freeze for at least 4 hours before serving. Garnish with mint leaves, if you like.
