Grilled Beef, Corn and Bean Salad
Grilled Beef, Corn and Bean Salad
Ingredients
1 lb. Raley's Black Angus boneless beef chuck steak
1 cup Lawry's Tequila Lime 30 Minute Marinade divided
2 ears fresh super sweet corn husked
1 (15- oz.) can Raley's Black Beans rinsed and drained
2 green onions sliced
1 (10- oz.) bag Ready Pac Chopped Romaine Lettuce
Directions
Pierce beef well with a fork and place in a bag
with 3/4 cup marinade; refrigerate for several
hours or overnight. Discard marinade; grill beef
and corn over medium heat for about 10 minutes,
turning once. Let cool slightly, then cut beef into
bite-size strips and cut corn off cob. Place both in
a large bowl with remaining 1/4 cup marinade,
beans and green onions; toss well to coat. Serve
over romaine lettuce.
Makes 4 servings.
