Cajun Chicken and Potatoes
Cajun Chicken and Potatoes
1 lb. russet potatoes
3/4 lb. chicken breasts boneless, skinless
1 small onion
1 tbsp. vegetable oil
1 tsp. Cajun seasoning
1/2 cup each: sliced celery, chopped bell pepper and chopped tomato
Crystal Hot Sauce (optional)
Prep time: 15 minutes, Cook time: 35 minutes

Cut potatoes, chicken and onion into 3/4-inch cubes. Cook in
hot oil in a large
skillet over medium-high heat, stirring frequently, until
potatoes and chicken are
browned; stir in seasoning. Reduce heat and cook, covered,
for about 15
minutes more or until potatoes are tender. Add vegetables
and cook for 5
minutes more. Serve with Crystal Hot Sauce, if you like.
