Fall Shrimp Salad
Fall Shrimp Salad
Ingredients
3 cups cooked and chilled Full Circle Organic Long Grain White Rice (1 cup uncooked)
2 cups Full Circle All Natural Peeled Deveined Tail-On Cooked Shrimp thawed, tails removed
1/2 cup halved red grapes
1/2 cup halved green grapes
1/4 cup shredded carrots
2 green onions sliced
chopped peanuts (optional)
fresh cilantro (optional) snipped
1/4 cup Full Circle Organic Ginger Sesame Sauce
3 tbsp. Full Circle Organic Extra Virgin Olive Oil
3 tbsp. unseasoned rice vinegar
Directions
Prep time: 15 minutes

Stir together rice, shrimp, grapes, carrots and green onions
in a medium bowl.
Mix Ginger Sesame Sauce, olive oil and rice vinegar in a
small bowl and pour
over salad. Toss well to coat all ingredients with dressing.
Top with peanuts and
cilantro, if you like.

Makes 4 to 6 servings.
