Ham, Corn and Tomato Cups
Ham, Corn and Tomato Cups
3 ea eggs
1/4 cup milk
1/2 cup sharp Cheddar cheese small cubes
1/3 cup each: diced ham, frozen or canned corn and diced tomato
1 green onion sliced
Spray 2 large custard cups or ramekins with nonstick cooking spray. Beat eggs
in a medium bowl with milk. Stir in cheese, ham, corn, tomato and green onion.
Spoon into prepared cups and bake at 350°F for 25 to 30 minutes or until eggs
are set in the center.

Makes 2 servings.

Recipe may be doubled.

Chardonnay Beer Pairing: Widmer Hefeweizen - Light enough to pair with eggs, but with enough flavor to match the ham, this Oregon wheat beer makes a great partner.
