Sweet and Spicy Tomato Chutney
Sweet and Spicy Tomato Chutney
Ingredients
1 lb. tomatoes cored and chopped
1 small onion chopped
1/2 small red bell pepper seeded and chopped
1/2 cup white wine vinegar
1/2 cup brown sugar lightly packed
1 tsp. mustard seeds
1/4 tsp. red pepper crushed
1/4 tsp. salt
Directions
This makes a great topper for grilled poultry,
pork or shrimp.


Prep time: 15 minutes, Cook time: 1 hour


Stir together all ingredients in a medium saucepan and bring to a boil. Reduce
heat and simmer, covered, for 30 minutes. Remove lid and increase heat. Cook,
uncovered, for about 30 minutes more or until chutney is thickened, stirring
frequently. Let cool.


Makes about 1½ cups.
