Chocolate Cherry Cheese Torte

Chocolate Cherry Cheese Torte
1 ea box chocolate cake mix*
1 ea (8- oz.) block cream cheese softened
1/2 cup powdered sugar
1/2 tsp. cherry extract
1/2 cup maraschino cherries chopped
1/2 ea (8- oz.) tub frozen whipped topping thawed
Additional whipped topping and whole maraschino cherries (garnish)

Prep: 30 minutes Cook: 15 minutes Makes: 12 servings

1. Lightly grease and flour a 12x16-inch sheet pan; set aside. Preheat oven and prepare cake mix according to package directions.
2. Spread into prepared pan and bake for 15 minutes. Let cool completely, then cut into 4 equal rectangular pieces. Meanwhile, beat cream cheese, sugar and extract with an electric mixer until light and fluffy; stir in chopped cherries and carefully fold in whipped topping.
3. Place one cake piece on a large rectangular serving platter and spread with 1/3 of the cream cheese mixture. Repeat layers twice more and top with the last piece of cake.
4. Chill until ready to serve. Before serving, garnish with whipped topping and whole maraschino cherries.

I made this for Christmas, using chopped candy canes instead of cherry flavorings. I increased the frosting to frost the top, and decorated with little striped pillow peppermints. A TERRIFIC hit!! Also good for Valentines Day.
