Broccoli and Cheese Frittata

Broccoli and Cheese Frittata
2 tbsp. butter
1/2 cup onion chopped
1-1/2 cups broccoli coarsely chopped
1/2 cup red bell pepper chopped
8 ea eggs
3/4 tsp. garlic salt
3/4 tsp. thyme
1/4 tsp. pepper
1/2 cup medium Cheddar cheese shredded
1/2 cup Havarti cheese shredded
Prep time: 20 minutes
Cook time: 20 minutes

Preheat oven to 400°F. Melt butter in a medium ovenproof skillet. Add onion and cook for 5 minutes or until softened. Add broccoli and red pepper; cook and stir for 5 minutes more. Beat together eggs, salt, thyme and pepper and pour into skillet. Cook for 1 minute, then stir and cook for 1 minute more. Lightly stir in cheese. Place skillet in oven and bake for 10 to 15 minutes or until center is set.

Makes 4 to 6 servings.
