Shrimp Scampi
Ingredients
1/4 cup butter (no substitutions)
1 lb. shrimp peeled and deveined
3 cloves garlic minced
2 tbsp. fresh lemon juice
2 tbsp. Chardonnay
2 tbsp. fresh parsley chopped
1 tbsp. sun-dried tomatoes chopped
Directions
Prep time: 5 minutes
Cook time: 10 minutes

Melt butter in a large skillet. Add shrimp and cook until mostly pink. Add garlic and cook for 1 to 2 minutes more. Add lemon juice and wine and cook for 2 minutes. Stir in parsley and tomatoes. Serve in a bowl with crusty French bread to dip in the buttery sauce.

Makes 2 servings.
