Chicken and Sausage Jambalaya
Chicken and Sausage Jambalaya
1 tbsp. olive oil
1 (16- oz.) package Evergood Louisiana Brand Hot Links sliced 1/4-inch thick
1 lb. chicken breasts boneless, skinless, cut in to bite-size strips
3 stalks celery sliced
1 large onion peeled and chopped
2-1/2 cups chicken broth
1-1/2 cups long grain rice
1 (14.5- oz.) can tomatoes diced
2 tsp. Cajun seasoning
1 tsp. thyme
1 cup bell pepper diced
Salt and pepper
Prep time: 15 minutes
Cook time: 40 minutes

Heat olive oil in a large stockpot. Add sausage and chicken; cook over medium-high heat for 5 minutes, stirring frequently. Add celery and onion and cook for 7 to 10 minutes more or until starting to brown. Add broth, rice, tomatoes, Cajun seasoning and thyme and bring to a boil. Reduce heat and simmer, covered, for 20 minutes. Remove from heat and stir in bell pepper. Replace cover; let stand for 5 minutes. Season to taste with salt and pepper.

Makes 6 servings.
