Cajun Style Red Beans and Rice

Cajun Style Red Beans and Rice
1/2 lb. dry red beans
1-1/2 cups onion chopped
1-1/2 cups celery chopped
1 cup green pepper chopped
2 cloves garlic minced
2 bay leaves
3/4 lb. ham steak diced
2 cups water
1 tbsp. Worcestershire sauce
1/4 tsp. each: cayenne pepper, thyme, basil and oregano
Tabasco Sauce, salt and pepper
3 cups white rice cooked
Prep time: 15 minutes
Soak time: 12 hours
Cook time: about 2 hours

Rinse and sort beans and soak according to package directions. Drain water and rinse beans. In a large pot, combine beans, onion, celery, green pepper, garlic, bay leaves, ham and enough water to cover beans and
vegetables. Bring to a boil; cover and simmer over low heat for 1 hour and 45 minutes, stirring occasionally and adding more water if necessary. Stir in Worcestershire, cayenne pepper and herbs; simmer, uncovered, for 10 to 20 minutes more or until liquid is absorbed. Taste and adjust seasonings, adding Tabasco, salt and pepper to taste. Serve over hot cooked rice.
