I really hope he washed that tube (and his hands, and that cutting board) before cutting through it and transferring any bacteria from the outside of that plastic to the ground beef within. We'd all like to think that everyone is aware of basic food-handling sanitation, but the truth is people who aren't comfrotable in the kitchen follow what they see exactly. Might be a good PSA to create a short video about food handling safety, then before vids such as this, CYA by saying "Please see our terrific video on safe food handling in home kitchens" or at least telling people to make sure the packaging has been washed and cutting surface sanitized.
