Cajun-Spiced Salmon with Spinach

Sautéed in white wine and spicy Cajun seasoning, tender, juicy salmon is served on a bed of fresh spinach and soaked in savory pan juices.

Ingredients

  • 2 tsp. olive oil*
  • 2 salmon fillets (5 oz. each)
  • 1 1/2 tsp. McCormick Cajun Seasoning
  • 1/2 cup white wine*
  • Fresh spinach
  • * Common pantry item.

Instructions

  1. Heat olive oil in medium sauté pan over medium-high heat.
  2. Sprinkle salmon with Cajun seasoning and place in sauté pan flesh side down; cook for 2-3 minutes.
  3. Turn salmon over, add wine and spinach and cook covered for 2 minutes.
  4. Serve salmon over spinach and drizzle with pan juices.
