California Sweet Potato Rounds with Blue Cheese, Apple and Thyme

Enjoy this delicious recipe, provided by our friends at California Grown, paired with a Cabernet Sauvignon!


  • 1 large or two small California Sweet Potatoes
  • 2 TBSP olive oil
  • 1/4 teaspoon fine sea salt
  • 4 oz blue cheese, such as Point Reyes
  • 1 Fuji or Granny Smith apple, cut into matchsticks
  • 3 sprigs fresh thyme


  1. Preheat oven to 425 degrees F. Lightly grease a baking sheet.
  2. Slice the sweet potato into thick rounds, about 1/4 or 1/3 inch thick.
  3. Place the slices in a bowl and toss with the oil and salt to fully coat. Arrange rounds in a single layer on the prepared pan. Bake for 15-18 minutes, until the rounds are golden and caramelized on the bottom. Allow to cool on the pan for 10 minutes.
  4. Transfer cooled rounds to a serving plate, and top with apple sticks and a bit of blue cheese. Top with fresh thyme leaves and enjoy.
