Chicken Breasts with Mushrooms and Thyme

Rich red wine, butter, and thyme sauce soak succulent, sautéed chicken breast and a blend of crimini and shiitake mushrooms, delivering sumptuous flavor on a shoestring budget.

Ingredients

  • 1/2 lb. boneless, skinless chicken breasts
  • 2 tsp. cooking oil*
  • 4 crimini mushrooms, quartered
  • 1/2 cup shiitake mushrooms
  • 1 tbsp. fresh thyme
  • 3/4 cup red wine*
  • 2 tbsp. butter*
  • 1/2 tsp. salt*
  • 1/4 tsp. ground black pepper*
  • *Common pantry item.

Instructions

  1. Season chicken with 1/4 tsp. salt and 1/8 tsp. pepper.
  2. Heat oil in medium sauté pan over medium high heat. Add chicken and cook 2-3 minutes on each side.
  3. Remove chicken from pan.
  4. Add remaining oil to pan, and add mushrooms, thyme and remaining salt and pepper. Cook until mushrooms soften.
  5. Return chicken to pan. Add red wine to deglaze pan and reduce wine by half.
  6. Turn off heat, stir in the butter. Serve immediately.
