Ingredients
- 1/2 lb. boneless, skinless chicken breasts
- 2 tsp. cooking oil*
- 4 crimini mushrooms, quartered
- 1/2 cup shiitake mushrooms
- 1 tbsp. fresh thyme
- 3/4 cup red wine*
- 2 tbsp. butter*
- 1/2 tsp. salt*
- 1/4 tsp. ground black pepper*
- *Common pantry item.
Instructions
- Season chicken with 1/4 tsp. salt and 1/8 tsp. pepper.
- Heat oil in medium sauté pan over medium high heat. Add chicken and cook 2-3 minutes on each side.
- Remove chicken from pan.
- Add remaining oil to pan, and add mushrooms, thyme and remaining salt and pepper. Cook until mushrooms soften.
- Return chicken to pan. Add red wine to deglaze pan and reduce wine by half.
- Turn off heat, stir in the butter. Serve immediately.
