  • 12 oz. Chicken Strips
  • Raley's Mole Poblano
  • Raley's Brown Rice
  • Raley's Zucchini, yellow squash, grapes tomatoes


  1. Heat 1 Tbsp. olive oil in large sautepan over medium high heat; add vegetables and season with salt and black pepper. Sauté for 3-4 minutes stirring occasionally until vegetables begin to soften.
  2. Remove vegetables from pan and keep warm.
  3. Add 1 Tbsp. olive oil in a large sauté pan over medium high heat. Add chicken; season with salt and and pepper. Sauté for 2 minutes to brown.
  4. Add mole sauce; stir and heat for an additional 2-3 minutes until hot and chicken is cooked through.
  5. Place rice in microwave safe dish. Cover with plastic wrap. Microwave on high for 1 ½ to 2 minutes until heated through. Serve chicken mole over rice.
